Ghee Rice

A flavorful rice recipe perfect for winter weekend lunches or weeknight dinners.

PREP TIME: 50 Minutes.
SERVES: 2

INGREDIENTS:

  • 1 cup Jashn basmati rice
  • 3 tbs ghee (clarified butter)
  • 1 tbs raisins (without seeds)
  • 15 to 18 cashews
  • 1/3 cup thinly sliced onions (50 grams or 1 medium-sized)
  • 1/3 teaspoon rock salt (edible) or add as required
  • 1.75 to 2 cups water for stove-top pan & 1.25 cups for instant-pot
  • 1 to 2 tbs chopped coriander leaves for garnish
  • 3 cloves
  • 3 green cardamoms
  • 1.5 inches cinnamon
  • 4 to 5 black peppercorns
  • 2 single strands of mace
  • 1 tej-patta (Indian bay-leaf)

METHOD:

  • Rinse 1 cup of Jashn basmati rice and soak it for 20 to 30 minutes.
  • Drain the excess water from the rice after 20-30 minutes and set it aside.
  • Heat 2 tbs of ghee in a heavy-bottomed pot or pan. Set the flame low so that you don't burn the ghee.
  • Once the ghee is hot, add the cashews and fry until it turns light brown. Make sure you don't burn them.
  • Once fried, add raisins until
  • Then add the raisins. Fry until raisins puff up a bit. Stir continuously, so they don't become too brown.
  • Once fried, remove cashews and raisins and set them aside.
  • Now add the whole spices in the same ghee and crackle them for a few seconds.
  • Add onion and stir well until they turn golden brown.
  • Now, add the soaked rice to the pot.
  • Stir the rice gently with seasoning, so the ghee coats it well. Do it for a few minutes.
  • Now, add 2 or 1.5 cups of water to the pot. Make sure the rice is completely covered with water.
  • Add salt to taste.
  • Bring the water to simmer by increasing the flame a bit. Cover the pot, reduce the heat back to low, and let it cook.
  • Simmer the rice for about eight to nine minutes until it is cooked well and water is absorbed.
  • Check the rice in between. If the rice grains are undercooked but the water has been absorbed, you can add a tablespoon of water and continue simmering.
  • Once the rice is cooked well, remove the pot from the heat and let it rest for a few minutes. After that, remove the lid gently and fluff the rice using a fork.
  • Now garnish the ghee rice with fried raisins and cashews and serve it hot! You can also use chopped coriander or mint leaves for extra flavor.

You can pair the ghee rice with dals, kormas, and other curries for a delicious treat.
